What was important was to go beyond the stereotypes of sake and brew sake. Aged sake , which once appeared in the literature of the Kamakura period and was revered as the best sake in the Edo period, is the finest and richest food in
the future, aiming for sake that blends with today's high-level food culture. I was convinced that it is the best taste that can be used in style . Finally, with the brilliance of amber, the sake "Yamabuki" that surpassed sake was born.
