The Junmai Daiginjo sake made by Senkin shuzo is known for its delicate flavor and smooth, clean finish. It is said to have notes of pear, apple, and melon, as well as a subtle hint of umami.
The brewery also uses unique strains of yeast that are only found in Tochigi prefecture, which gives their sake a distinct character and sets it apart from other sakes produced in Japan.
Overall, Senkin shuzo's commitment to quality and tradition has made their sake a beloved favourite among sake enthusiasts worldwide.
Senkin shuzo has won numerous awards for their sake. In fact, they are considered one of the top sake breweries in Japan. Their Junmai Daiginjo sake has won gold medals multiple times at the Annual Japan Sake Awards, which is the most prestigious sake competition in Japan. They have also won awards at international competitions such as the International Wine Challenge and the Decanter World Wine Awards. Their sake is highly regarded for its balance of aroma, flavour, and texture.
Senkin shuzo uses traditional techniques to make their sake. Their sake is made from high-quality rice, pure water, and koji mold, which is a type of fungus that is essential for sake fermentation.
One of the key techniques used by Senkin shuzo is called "yamahai," which is a traditional fermentation method that helps to produce a robust, full-bodied sake. This technique involves allowing the yeast to ferment naturally without any added lactic acid, which creates a complex flavor profile.
Senkin also uses a technique called "kimoto," which is another traditional fermentation method that is known for producing a deep, rich flavour in sake. This method involves using a special tool called a "pole" to break up the rice and knead it with water and koji. The process of kneading the rice creates a unique environment that encourages the natural growth of lactic acid bacteria, which are important for fermentation.
Overall, Senkin shuzo's commitment to using traditional techniques and high-quality ingredients are what make their sake so special and well-regarded.
